Mexican Rice

My favorite thing about going out to a Mexican restaurant is the rice. So I decided to give it a try at home. It was super easy and tasted great. Now I don't have to wait for date night to enjoy some great Mexican rice. Anyone else love this stuff?

Mexican Rice
3 Tbsp vegetable oil
1 cup long grain rice
1 tsp garlic salt
1/2 tsp ground cumin
1/2 cup tomato sauce
2 cups chicken broth

Heat oil in a large saucepan over medium heat and add rice. Cook until rice is puffed a deep golden brown. Stir continually. While the rice is cooking add the garlic and cumin. Stir in the tomato sauce and chicken broth. Bring to a boil. Reduce heat and simmer 25-30 minutes. Fluff with fork. Serve and enjoy!
