Zucchini Salsa

Sorry I don't have a picture of this one. I haven't been able to make any this year since my chickens ate my zucchini's. (You can read that story here) But sister-in-law asked me to post this since her recipe somehow got ruined, so here it is. This stuff is really good. I think it was originally called zucchini relish cause it is more sweet than hot and spicy like salsa. But our family likes to eat it with chips, so we call it zucchini salsa.

Zucchini Salsa
2 cups zucchini
1 cup onion
1/2 cup green pepper
1/2 cup red pepper
2 Tbsp salt
Chop all of the vegetables and mix together in a bowl. Sprinkle the salt over the top. Set aside.

1 3/4 cup sugar
1 cup apple cider vinegar
2 tsp celery seed
2 tsp mustard seed
Mix in a saucepan. Boil until the sugar is dissolved. Reduce heat and simmer for ten minutes. Pour the sauce over the veggies and stir. Let it sit for ten minutes. Pour into prepared jars. Place the jars into a large canning pan. Cover the jars completely with water. Bring the water to a boil and boil for 30 minutes. Remove the jars from the water and set untouched on the counter until they have sealed. They are sealed if the lid doesn't pop when pushed. Enjoy!
