It seems to have suddenly turned off cold here. So what better way to warm up than a nice warm bowl of soup. This one is delicious. It has all the flavors of a great baked potato mixed into a bowl of soup.
Creamy Baked Potato Soup
1/2 cup butter
2/3 cup all-purpose flour
7 cups milk
4 lg. baking potatoes, baked, peeled, cubed (about 4 cups)
4 green onions, sliced
8-10 bacon strips, cooked, crumbled
1 1/4 cups cheddar cheese, shredded
1 cup sour cream(more or less to taste)
3/4 tsp salt
1/2 tsp pepper
Melt butter. Stir in flour, heat and stir until smooth. Gradually add milk, stirring constantly until thickened. Add potatoes and onions. Bring to a boil, stirring constantly. Reduce heat and simmer 10 minutes. Add remaining ingredients. stir in cheese until melted. Serve immediately. Serves 8-10. Enjoy!
