Mini Cadbury Egg Cookie Bars


If given the choice between a home baked treat or candy 99% of the time I will choose the home baked treat.  Mini Cadbury Eggs are part of the 1%  when candy takes over.  These delicious little eggs are seriously my weakness!  Knowing how much I love them my sweet husband recently gave me 3 bags for my birthday.  After eating my way through way more than I should have I had a brilliant idea.  Why not add some cadbury mini eggs to some cookie bars?  Now I can have the best of both worlds, my candy weakness and a home baked treat in one.


 
Mini Cadbury Egg Cookie Bars
 
1 Cup Butter, softened
2/3 Cup Brown Sugar
2/3 Cup Sugar
2 Eggs
1 tsp Vanilla
1tsp Baking Soda
3/4 tsp Salt
2 3/4 Cups Flour
1 1/2 Cups Cadbury Mini Eggs, coarsely chopped
Cream the butter and sugars together.  Add the eggs and vanilla, mix well.  Add the dry ingredients and mix until just combined.  Stir in the mini cadbury eggs.  Spread the dough evenly in a greased 9x13 pan.  Bake in a preheated 350 degree oven for 20-22 minutes.  Cool and Enjoy!
