Strawberries and Cream Popsicles

I am loving all of the fresh strawberries available right now.  I love all of the fresh fruit available in the spring/summer.  My local grocery store had strawberries on sale a few weeks for the lowest price I've seen in a Long time.  I guess you could say I went a little over board and came home with two cases of strawberries:)  Which equals 16 POUNDS of strawberries.  Needless to say I've been adding strawberries to everything.  I used a lot them to restock my strawberry freezer jam supply for the year and then froze a bunch to use in smoothies for breakfast.  There were still plenty left to make some strawberry cheesecake fruit salad and these perfectly creamy popsicles with a strawberry swirl.

My taste testers were more than willing to dig right in. 

 These popsicles were a big hit around our house and as you can see they didn't last long.

Strawberries and Cream Popsicles
2 Cups Strawberries, pureed
4 Ounces Cream Cheese, softened
6 Tablespoons Powdered Sugar
1/4 Cup Milk
8 Ounces Whipped Cream(Cool Whip),thawed
Puree strawberries, set aside.  Blend the cream cheese and powdered sugar together until smooth.  Blend in the milk until completely combined.  Fold in the whipped cream.  Layer the cream cheese mixture and the strawberry puree in your popsicle mold.  Probably about 4-5 layers.  Like 2 of one mixture and 3 of the other.  It doesn't have to be exact, because you are going to swirl them together.  To swirl I used a bamboo skewer, but a chopstick, handle of a spoon or fork, or anything long and skinny would work.  Simply stick it in each mold and spin it around a few times until the layers start to swirl together, but are not completely combined.  Freeze for at least 4 hours, overnight is better.  Enjoy!
