Homemade Granola

When I first decided to try making this I thought I would like it. I was surprised at just how much I love it! This is such a great snack or it works great for breakfast sprinkled in yogurt. And I love how I can at least feel a little bit healthy since I’m eating granola instead of a cookie or candy. This has quickly become one of my favorite snacks. The only problem is once I start eating it I can’t stop.
Homemade Granola

In a large bowl mix:
4 cups old fashioned oats
1 cup sliced almonds
1/2 cup coconut
1/2 cup miniature semi-sweet chocolate chips
1/2 cup brown sugar
1/2 tsp salt
1/2 tsp ground cinnamon
Your choice of dried fruit(optional)
1/3 cup honey
1/3 cup peanut butter
2 tsp vanilla
In a saucepan warm the honey and peanut butter until melted and combined. Do not boil. Whisk in the vanilla. Pour over the dry ingredients and stir gently until evenly coated. Spread granola on a lightly greased baking sheet. Press down firmly. Bake at 350 for 10 minutes. Allow the granola to cool completely on the baking sheet. Store in an airtight container. Enjoy!
